Flying Fish

Open water long-line and potfish catches this summer in the Virgin Islands have been in a bit of a slump. Miss Perky has been creating her catering menus with alternatives to the local fish items with tilapia, Nova Scotia salmon, and fresh Wahoo flown in from Alaska!

If you’re itching for a recipe, here is one of Miss Perky’s favorites:

Flying Fish

1/2 cup this
Pinch of that

Grate the galangal, and add some of these.

Throw it into a pan on high heat. Add the flambé.

Serve with garlic aioli.
