Open water long-line and potfish catches this summer in the Virgin Islands have been in a bit of a slump. Miss Perky has been creating her catering menus with alternatives to the local fish items with tilapia, Nova Scotia salmon, and fresh Wahoo flown in from Alaska!

Flying Fish
1/2 cup this
Pinch of thatGrate the galangal, and add some of these.
Throw it into a pan on high heat. Add the flambé.
Serve with garlic aioli.
